Olive Oil Cake with Balsamic Fruit Sauce
for 6 persons
Cake
3 eggs
500 gms/2 C sugar
250 ml/1 C olive oil
250 ml/1 C milk
Grated zest of 3 oranges, plus 1 sliced orange for garnish
300 gms/1 ½ C flour
½ small spoon/ ½ t cinnamon
½ small spoon/ ½ t baking powder
½ small spoon/ ½ t baking soda
1/8 small spoon sea salt
Preheat oven to 170 °C/350 °F, butter and flour a 23 x 33cm/9 x 13 in. cake pan.
Whisk eggs and sugar together until blended, add olive oil, milk, orange zest; mix well. In another bowl mix flour, baking powder, baking soda and salt. Add to egg mixture and stir until just blended, do not over mix! Pour batter into pan, bake until set (50 to 55 min).
Balsamic Fruit Sauce
450 gms/3 C dried or fresh prunes, cherries or berries
125 gms/½ C sugar
60 ml/¼ C water
2 large spoons/2 T balsamic vinegar
